Quinoa Breakfast Bowl
- 1/2 banana
- 1 tbsp peanut butter
- 1 tsp honey
- 1/2 c milk
- 1/2 c cooked quinoa
- dash of vanilla
- 1/4 to 1/2 c frozen or unfrozen blueberries, strawberries, other fruits
- couple tbsp flaked almonds or other nuts
In a small bowl, mash the banana. Add PB, honey, and vanilla and mix until smooth. Add the milk and mix to combine. Fold in quinoa and half the berries and mix.
Pour into hipster mason jar or glass and top with remaining berries and nuts.
Seal the jar and put in the fridge for at least 8 hours or overnight.
