Mushroom Strudel
Ingredients
1 pound mushrooms, chopped
1 1/2 Tbl. oil
1 medium onion, chopped
1 garlic clove, minced
1/4 c. Marsala
1/4 tsp. thyme
1/8 c. basil or sage
1/4 c. spinach leaves
1/4 tsp lemon rind (or more, to taste)
1/4 pound feta
3/8 c. breadcrumbs
4 sheets filo
1 1/2 Tbl. butter
1/4 pound feta
Method
Fry onions, garlic, mushrooms until soft. Add Marsala, thyme, sage, spinach, lemon rind, and crumbled feta. Let the strudel filling cool (otherwise, it causes the filo to split).
Baste filo with melted butter. Sprinkle top sheet with breadcrumbs.
Roll into a strudel and bake for 30 minutes at 350.
