Pandemic Apple Bread Pudding for Two
<p>In the event of a global pandemic, cheer yourself up and bolster your immune system with this comforting dessert.</p>
<ul>
<li>1 c milk</li>
<li>1 tbsp butter (or use some whipping cream, see note)</li>
<li>1/2 tsp vanilla extract</li>
<li>1/2 tsp cinnamon</li>
<li>some cardamon</li>
<li>1 tbsp whiskey or whatever booze is in your pandemic pantry</li>
<li>2 1/2 tbsp sugar</li>
<li>pinch salt</li>
<li>1/4 loaf bread cut into 2-inch cubes (about 3 cups)</li>
<li>2 eggs, beaten</li>
<li>1 apple, cut into chunks</li>
<li>raisins</li>

<p>If you've got it (ha! unlikely!), use a sweet egg bread like challah. If you're using a random dried out lump of bread, cut off the hard crusty bits before cubing it. </p>
<p>Preheat oven to 350.</p>
<p>In a small saucepan over low heat, warm the milk, butter, spices, booze, sugar and salt. Continue cooking just until butter melts and sugar dissolves; cool. Once cool, add eggs and whisk.</p>
<p>Note: Alternatively, replace some of the milk with whipping cream and skip the butter. Whisk the eggs and sugar together to dissolve sugar and add milk, cream, spices, booze and salt. Skip the warming step.</p>
<p>Meanwhile, butter a 4-to-6 cup dish and fill it with cubed bread, apples, and raisins.</p>
<p>Pour custard mixture over the bread. Bake for 45 minutes, or until custard is set but still a little wobbly and top of the bread is brown and a little crunchy.</p>
<p>Serves 2.</p>
