Corn Pudding
Ingredients
1 1/2 tsp olive oil
1 c. chopped onion
1/2 red bell pepper, chopped
1 tsp minced garlic
2 c. whole kernel corn, fresh or frozen
1 c. milk
1/4 c. cornmeal
2 eggs
1 1/2 shredded Cheddar cheese
2 Tbl parsley
1/2 c. bread crumbs, or crushed tortilla chips
salt and pepper to taste
Method
Saute onion, garlic, red pepper and corn. Bring milk to boil, add cornmeal. Blend in eggs. Stir in onion mixture, most of the cheese. Spoon into greased baking dish. Sprinkle top with remaining cheddar and breadcrumbs or tortilla chips. Bake at 375 for 40 to 45 minutes.
