Bulgar chili
Ingredients
1 c. water
3/4 tsp salt divided
1/2 c. coarse whole wheat bulgar
2 T olive oil
1 c. chopped onion
1 c. chopped Bell peppers
2 cloves garlic
2 1/2 T. chili powder
2 tsp. oregano
2 tsp. paprika
1 tsp cumin
1 T sugar
1T red balsamic vinegar,
1/2 tsp cinammon
a little pure cocoa powder to taste
1 28 oz. can stewed tomatoes, whole or diced
1 16 oz can red beans
Method
Bring water 1/4 tsp salt to boil, add bulgar and cook for about 20 minues until water is absorbed.
Heat oil in skillet, add onions, peppers, a few chopped carrots, some mushrooms, cauliflower, brocolli to taste. Cook until vegetables have browned a little and softened.
Add spices.
Stir in tomatoes, beans, remaining salt. Cook for about 20 minutes until vegetables are cooked.
