Tofu Pad Thai
Ingredients
Sauce
1/4 c. tamarind paste
1/6 c. soy sauce or tamari
3 1/2 T brown sugar
1 1/2 tsp. chili garlic sauce
1 1/2 tsp lime juice
1-2 tsp Vegetarian Fish Sauce
Stir Fry
1 T sesame oil
1 c. firm tofu, tempeh, or smoke tofu
1/2 tsp chili flakes
2 cloves garlic about 1 T.
1 T. tamari
1 c. bean sprouts
1 c. chopped green onions
handful of mushrooms
1/3 c. chopped, roasted, salted peanuts
Noodles
8 oz. Pad Thai rice noodles
For Serving
lime wedges
shredded carrot
cilantro or parsley
Method
Cook sauce ingredients for 30 sec. Set aside
Prep stir fry ingredients: Cube tofu, chop onions, mince garlic, shred carrot.
Add noodles to pot of boiling water. Turn off the heat. Let sit for about 5-6 minutes.Drain and toss with a little oil so they won't stick.
Heat skillet or wok. Add oil, tofu, and mushrooms if using. Fry for a few minutes, add chili flakes, garlic, tamari.
Add noodles, bean sprouts, sauce, green onions. Cook for 2-3 minutes until the sauce has coated everything. Garnish with lime, peanuts, shredded carrot, cilantro or parsley. Serve.
