Moroccan Braised Lamb Stew

<p>INGREDIENTS</p> <p>1 T. ground cumin</p> <p>2 tsp. ground coriander</p> <p>1 1/2 tsp salt</p> <p>1 tsp fennel seeds</p> <p>1/2 tsp cayenne pepper</p> <p>1 1/2 pounds lamb shoulder cut into pieces</p> <p>4 T. olive oil</p> <p>1 large onion chopped</p> <p>2 cloves of garlic</p> <p>1T. tomato paste</p> <p>2 c low salt chicken broth</p> <p>1 15 1/2 oz can chick peas</p> <p>1 c. dried apricots chopped</p> <p>2 large plum tomatoes</p> <p>1/2 tsp cinnamon</p> <p>1 T grated fresh ginger</p> <p>2 tsp lemon zest</p> <p>1 T chopped cilantro</p> <p>METHOD</p> <p>1. Mix first 6 ingredients, add lamb, toss to coat with spices. Working in batches sear the lamb.</p> <p>2. Add onions to drippings in pan. Saute until onion is soft. Add remaining ingredients, except cilantro. Bring to a boil, simmer for an hour covered and&nbsp;20 minutes uncovered. Sprinkle with cilantro.</p> <p>&nbsp;</p>
