Pumpkin Streusel Muffins
Ingredients
1.5 c flour
1 tsp baking soda
.5 tsp baking powder
I tsp cinnamon
.25 tsp cloves
.5 tsp ginger
.5 tsp nutmeg
1 c. pumpkin puree
.5 c sugar
2 eggs
.5 c canola oil Or sunflower, safflower.
1/6 c orange juice
Topping
.5 c flour
Skimpy 1/3 c. brown sugar
.5 tsp cinnamon
.25 C. butter
Sprinkle of crumbled walnuts
Method
Mix dry ingredients. Mix wet inredients. Add to dry. Gently mix. Strew on the streusel. (I thought this amount of streusel would do for two batches, so use your judgement.) This makes one batch of 12 muffins. Bake at 375 degrees for 20 minutes.
