Lemon Ice
- 3 eggs, separated
- ½ c. + 2 tbsp. sugar
- 1/3 tsp. salt
- ¼ c. lemon juice

- ½ pt. heavy cream
- ¾ c. wafer crumbs, divided into 2
Separate eggs. Mix egg yolks, ½ c. sugar, salt, lemon juice and rind. Microwave for 3 minutes or heat in a small saucepan or double boiler until mixture forms a thick custard. If the custard curdles either run it through a Cuisinart or pour it a little at a time into another bowl and whisk briskly until it uncurdles.
Beat egg whites. Add 2 tbsp. Microwave for 3 minutes. Beat egg whites; add 2 tbsp. sugar, and beat into yolk mixture. Beat ½ pt. cream and add. .
Line fridge tray with half the wafer crumbs and pour lemon ice mixture on top of crumbs. Sprinkle the other half on the top. Freeze until hard.
