Lemon Ice
- 3 eggs, separated
- ½ c. + 2 tbsp. sugar
- 1/3 tsp. salt
- ¼ c. lemon juice
- ½ tsp. lemon rind
- ½ pt. heavy cream
- ¾ c. wafer crumbs, divided into 2
Mix egg yolks, ½ c. sugar, salt, lemon juice and rind. Microwave for 3 minutes or heat in a small saucepan or double boiler until mixture forms a thick custard. If the custard curdles either run it through a Cuisinart or pour it a little at a time into another bowl and whisk briskly until it uncurdles.
Beat egg whites. Add 2 tbsp. sugar, and beat into yolk mixture. Beat ½ pt. cream and add.
Line fridgea traybread pan with half the wafer crumbs and pour lemon ice mixture on top of crumbs. Sprinkle the other half on the top. Freeze until hard.
