The Best Greek Potatoes

Ingredients

1 Pound of potatoes peeled and cut into thick wedges

3 garlic cloves, crushed

.25 c chicken broth

.25 c. olive oil

.5 of a whole lemon, juiced. about 1.5 TBL

.5 TBL dried oregano

.5 TSP salt

.25 TSP ground pepper

parsley for sprinkling at the end

Instructions

Line a baking dish with parchment paper

Arrange potaoe wedges in the pan

Combine garlic, stock, olive oil, lemon, oregano, salt, pepper. Stir and our over portatoes

Bake uncovered for 45 minutes. Stir well and pour sauce over potatoes.

Bake again for another 30 to 45 minutes. 

Scatter with parsley.

Delish!

Note: I used red potatoes and didn't peel them. I think they were fine.
