Basic Salad Dressing
- Spoonful of olive oil
- Salt and pepper to taste
- Balsamic (not white) vinegar to taste (but about 2 tbsp)
- Mustard (either Dijon or dried) to taste
- Optional: tarragon, basil, or dill
Add olive oil, salt and pepper right after you made the salad. Take a pinch of mustard or whatever spices you want and add to vinegar, then save your vinegar mixture and add right before you’re about to eat the salad, to avoid withering the lettuce leaves.
