Chocolate Mousse
- 4 oz. semi-sweet chocolate
- 2 tbsp. water
- 2 eggs, separated, room temp.
- pinch salt
- 1/3 c. granulated sugar
- ¾ c. whipping cream
In a heavy saucepan on low heat, melt the broken chocolate pieces with water, stirring constantly. Beat the egg yolks until thick. Stirring quickly, add egg yolks to the chocolate, then remove the mixture from the heat. Beat egg whites until stiff peaks form, then continue to beat while gradually adding sugar. Fold into mousse mixture. Pour into individual serving dishes, and chill. Serve with whipped cream.
