Lemon Curd Tarts
# Shells
- 1 c. sifted flour
- 1 tsp. baking powder
- 1 tbsp. sugar
- ¼ tsp. salt
- ½ c. butter
- 1 tbsp. cold water
Roll out pastry gently. Bake at 325° F. for about 8 min
# Filling
- Juice & rind of 2 lemons
- 1 c. sugar
- 3 beaten eggs
- ¼ c. butter
Filling
- Juice & rind of 2 lemons
- 1 c. sugar
- 3 beaten eggs
- ¼ c. butter
Mix sugar, eggs and lemon in a double boiler. See “how to use a double boiler.” Cook with lid on. When the mixture is thick, remove lid. Add butter and stir. Fill shells with lemon mixture and serve.
