Egg Salad Sandwiches
- Hard boiled eggs (1 or 2 per sandwich)

- 1 ½ tbsp mayonnaise per egg

- Optional: capers, pepper, curry to taste

Hard boil an egg. (See “hard boiled eggs vs. soft boiled eggs” for help!) !). Once boiled, cool the egg by running it under cold water. Bang against a table/counter/pot and shell the egg. Mash egg with fork, add mayonnaise and mix. Add salt. Optional: add capers, pepper, curry.
