Caesar Salad

  • 2 heads Romaine
  • 6 slices French bread
  • 2 tbsp. oil
  • 2 cloves garlic

Mix butter, oil, garlic. Soak bread in mixture, cut into croutons and bake at 350° F. for 15 min. (or, buy croutons)

Dressing (or, use Nicole’s Salad Dressing)

[Tom: Do not use this dressing. It has no anchovies and doesn't explain how to create an emulsion.]

  • 2/3 c. oil
  • ¼ c. lemon juice
  • 1 egg coddled 10 sec. in boiling water
  • ½ tsp. salt

Cut Romaine lettuce, add salt & pepper, toss w. croutons, parmesan & dressing. Optional: anchovies, bacon bits.
