Antipasto
makes 22 pints
-2 lb gr pepper
-2 lb red pepper
-3 lb cauliflower
-1 gal black olives, pitted+drained
-3 cans green beans
-3 jars white pickled onions
-4 cans mushrooms
-1 jar dill pickles
-5 cans flaked tuna
-3 jars stuffed olives, drained
-2 c white vinegar
-2 c olive oil
-2 litres ketchup
- gather together a work party for chopping
- cut up everything into fairly small pieces
- put vinegar, oil, ketchup into a pot and heat almost to boiling
- add ingredients and stir
- pack into jars and seal
- can in hot water bath for 25 minutes
