Charlotte's Lemon Curd Tarts
<p><strong>Shells--ingredients</strong></p>
<p>1c. sifted flour</p>
<p>1 Tbl. sugar</p>
<p>1/2 c. butter</p>
<p>1 tsp. baking powder</p>
<p>1/4 tsp. salt</p>
<p>1 Tbl. cold water</p>
<p><strong>Method</strong></p>
<p>Roll out gently. Bake at 325 F. for about 8 minutes.</p>
<p><strong>Filling--ingredients</strong></p>
<p>juice and rind of 2 lemons</p>
<p>3 beaten eggs</p>
<p>1 c. sugar</p>
<p>1/4 c. butter</p>
<p><strong>Method</strong></p>
<p>Mix sugar, eggs, and lemon in top of double boiler. Cook. Put lid on. When thick, remove lid. Add butter and stir. Fill shells. </p>
