Lemon Sponge Pudding
- 1 c. sugar
- 2 egg whites
- 1 tbsp. butter
- 2 beaten egg yolks
- 1 c. milk
- grated rind & juice of 1 lemon
- 1 heaped tbsp. flour (See “tips and terms for measurement”)
Mix butter, sugar and flour. Add egg yolks and milk. Add lemon juice and rind. Beat egg whites stiff, then fold in. Bake at 325° in a [hot water bath](/recipe/54) for ¾ - 1 hr.
