Vegetables with Cheese Sauce
<p>Can be done with leeks, cauliflower, leeks and mushrooms.</p> <p>;<;strong>Ingredients</strong></p> <p>6 leeks, white and light green part only or 1 cauliflower</p> <p>3 Tbl butter</p> <p>1/2 c. vegetable stock</p> <p>1/2 c. whipping cream</p> <p>1 1/2 c. smoked Cheddar</p> <p>1/2 c. bread crumbs</p> <p>1/2 tsp garlic (or more, to taste)</p> <p>1Tbl chopped parsley</p> <p>;<;strong>Method</strong></p> <p>Wash leeks and slice into rounds. or or cut cauliflower into florets. Preheat oven to 375F</p> <p>Heat 2Tbl butter in skillet, saute leeks about 2 minutes. If using cauliflower, you can roast it or stir fry it. Add stock and cream. Simmer until vegetables are done. Using a slotted spoon, tranfer vegetables to a baking dish. Sprinkle cheese over cooking liquid, cook at low heat until cheese melts. Pour sauce over vegetables.</p> <p>Heat 1 Tbl butter in skillet, add garlic and breadcrumbs. Saute for about a minute. Stir in parsley and bake for about 15 minutes until sauce bubbles and top is golden brown.</p> <p>&nbsp;</p> <p>&nbsp;</p>
