Mushroom Strudel
<p><strong>Ingredients</strong></p>
<p>1 pound mushrooms, chopped</p>
<p>1 1/2 Tbl. oil</p>
<p>1 medium onion, chopped</p>
<p>1 garlic clove, minced</p>
<p>1/4 c. Marsala</p>
<p>1/4 tsp. thyme</p>
<p>1/8 c. basil or sage</p>
<p>1/4 c. spinach leaves</p>
<p>1/4 tsp lemon rind (or more, to taste)</p>
<p>1/4 pound feta</p>
<p>3/8 c. breadcrumbs</p>
<p>4 sheets filo</p>
<p>1/4 pound feta</p>
<p>3/8 c. breadcrumbs</p>
<p>4 sheets filo</p>
<p>1/2 Tbl. butter</p>
<p>1/2 Tbl. butter</p>
<p>1/4 pound feta</p>
<p><strong>Method</strong></p>
<p>Fry onions, garlic, mushrooms until soft. Add Marsala, thyme, sage, spinach, lemon rind, and crumbled feta. Let the strudel filling cool (otherwise, it causes the filo to split).</p</p>
<p>Baste filo with melted butter. Sprinkle top sheet with breadcrumbs.</p>
<p>Roll into a strudel and bake for 30 minutes at 350.</p>
