Bulgar chillichili
<p><strong>Ingredients</strong></p>
<p>1 c. water</p>
<p>3/4 tsp salt divided</p>
<p>1/2 c. coarse whole wheat bulgar</p>
<p>2 T olive oil</p>
<p>1 c. chopped onion</p>
<p>1 c. chopped Bell peppers</p>
<p>2 cloves garlic</p>
<p>2 1/2 T. chili powder</p>
<p>2 tsp. oregano</p>
<p>2 tsp. paprika</p>
<p>1 tsp cumin</p>
<p>1 T sugar</p>
<p>1T red balsamic vinegar,</p>
<p>1/2 tsp cinammon</p>
<p>a little pure cocoa powder to taste</p>
<p>1 28 oz. can stewed tomatoes, whole or diced</p>
<p>1 16 oz can red beans</p>
<p><strong>Method</strong></p>
<p>Bring water 1/4 tsp salt to boil, add bulgar and cook for about 20 minues until water is absorbed.</p>
<p>Heat oil in skillet, add onions, peppers, a few chopped carrots, some mushrooms, cauliflower, brocolli to taste. Cook until vegetables have browned a little and softened.</p>
<p>Add spices. </p>
<p>Stir in tomatoes, beans, remaining salt. Cook for about 20 minutes until vegetables are cooked. </p>
